Ingredients

Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin with liners.

  • Mix dry ingredients: Whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt in a bowl.

  • Mix wet ingredients: In another bowl, whisk oil, eggs, buttermilk, vanilla, vinegar, and red food coloring.

  • Combine wet and dry ingredients, stirring gently until just mixed.

  • Fill muffin liners about ¾ full.

  • Bake for 18–22 minutes or until a toothpick inserted comes out clean.

  • Cool for 5 minutes in the pan, then transfer to a wire rack.

  • Serve plain or with cream cheese frosting.
