  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 cup wild rice blend, rinsed
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 small onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tbsp butter or olive oil
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

1️⃣ Sauté Vegetables:

  • Turn on the Sauté mode on the Instant Pot.
  • Melt butter and sauté onions, garlic, carrots, and celery for 3-5 minutes until softened.

2️⃣ Add Chicken & Rice:

  • Place chicken breasts into the pot.
  • Add wild rice, thyme, bay leaf, salt, and black pepper.

3️⃣ Pour in Broth:

  • Pour in chicken broth and water. Stir to combine.

4️⃣ Pressure Cook:

  • Close the lid, set to High Pressure for 35 minutes, and natural release for 10 minutes.

5️⃣ Shred Chicken:

  • Remove the cooked chicken, shred with two forks, then return it to the pot.

6️⃣ Make It Creamy:

  • Stir in heavy cream (or coconut milk for dairy-free).
  • (Optional: Mix flour with ¼ cup of cold water and add for extra thickness.)

7️⃣ Final Touches:

  • Stir, garnish with chopped parsley, and serve hot with crusty bread!

Notes

  • For a dairy-free version, use coconut milk instead of heavy cream.
