Crumble Dough (base & topping):

  • 1 cup all-purpose flour (or gluten-free blend)

  • 1 cup rolled oats

  • ½ cup light brown sugar

  • ¼ tsp salt

  • ½ tsp baking soda

  • ½ tsp cinnamon (optional)

  • ¾ cup melted butter (or vegan butter)

  • 1 tsp vanilla extract

Chocolate Filling:

  • 1 cup semi-sweet chocolate chips

  • ½ cup sweetened condensed milk (or coconut version)

  • 1 tbsp butter (or coconut oil)

  • ½ tsp espresso powder (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment.

  2. Mix crumble dough: Combine dry ingredients, stir in melted butter and vanilla.

  3. Make chocolate filling: Melt chocolate chips, condensed milk, butter, and espresso powder in a saucepan.

  4. Assemble: Press ⅔ of crumble mix into pan, spread chocolate layer, sprinkle remaining crumble on top.

  5. Bake for 25–30 minutes until golden.

  6. Cool & slice: Let set, chill for clean cuts, then slice into bars.

Notes

  • Don’t overmix the dough you want crumbles, not a smooth dough.
  • Use rolled oats (not quick oats) for that hearty, bakery-style finish.
  • Let the bars cool fully before slicing to avoid a messy middle.
