Ingredients
Main Ingredients:
2 chicken breasts (or thighs)
1 lb pasta (penne, rotini, or fettuccine)
3 cups chicken broth
1 cup heavy cream
1 can (10 oz) diced tomatoes with green chilies (Rotel)
1 red & 1 green bell pepper, sliced
1 small onion, diced
4 cloves garlic, minced
1 cup shredded Parmesan cheese
Cajun Seasoning Mix: (or use store-bought)
1 tbsp smoked paprika
1 tsp each: garlic powder, onion powder, oregano, thyme
½ tsp each: cayenne, black pepper, salt
Extras:
1 tbsp butter
½ cup cream cheese (optional)
Fresh parsley (for garnish)
Instructions
1️⃣ Prep: Slice peppers, dice onion, mince garlic, and mix seasoning.
2️⃣ Layer: Add chicken to crockpot, season, then top with onions, peppers, garlic, tomatoes, and broth.
3️⃣ Cook: Cover and cook on LOW (6-7 hrs) or HIGH (3-4 hrs) until chicken is tender.
4️⃣ Shred & Mix: Shred chicken, stir in cream, Parmesan, and optional cream cheese.
5️⃣ Pasta: Cook pasta separately, drain, and mix into the crockpot.
6️⃣ Serve: Let it sit for 10 minutes, garnish with parsley & extra Parmesan.
Notes
✅ Use chicken thighs if you prefer juicier, more flavorful meat.
✅ Adjust the spice level by reducing or increasing the cayenne pepper.
